April Marsh's Muffins --Really Yummy!!



ENHANCED BANANA NUT MUFFINS

~Nutrition even my pickiest eaters love~

Begin by spraying non-stick aerosol into foil liners or muffin tins. Paper liners are my second choice. Yield: 36 muffins or 3 loaves (or any combination thereof)

Preheat oven to 350'

In blender combine:

1/2 C Applesauce (you can even simmer chopped apples 20 min. and blend)

3 C bananas-- if frozen, set these out 60 min. in advance

3 large eggs

1/2 cup butter (room temp)

In X-Large bowl whisk together well:

1 C Whole Wheat flour 1 t. Soda

3 C Flour 1 t. Salt

1+1/2 C Sweetener (3/4 C natural cane + 3/4 C sugar) 1/2 t. Cinnamon

1 T. Baking Powder 1/4 t. Nutmeg

Optional: 1/2 C nuts

Pour blended mixture into dry ingredients and stir just until moistened. Medium ice cream scoop works great to fill cups 2/3 full. Bake muffins 25 min or so. Loaf 45 min. or so (until toothpick comes out clean)

When using loaf pans, the greatest time-saver is Reynold's non-stick wrap to line the pan. Then after loaf cools, it's practically pre-wrapped; just crimp the edges!
