Last night the mini-class "Salsa & Swap" was lots of fun. Here are the 3 yummy recipes for salsa.
Tami Olsen's 5 Minute Salsa
comments: "Flavorful. It was fresh and colorful- a "pretty" salsa."
Ingredients:
3 large tomatoes
1 onion
1 green pepper
5 cloves of garlic
salt & pepper to taste
Chop all ingredients and mix together.
Denise Park's Salsa
comments: "Wonderful flavor. A great homemade salsa for even winter time. Restaurant quality."
Ingredients:
1 medium onion
1 bunch cilantro
1 can stewed, diced or chopped tomatoes
2 cans tomato sauce
1-2 t salt
Chop onion & cilantro in chopper. Add the rest of the ingredients until mixed well. You can add almost anything else to spice up your salsa: peppers, jalapenos, lime or lemon juice, chili powder, red pepper flakes.
Emilee Watkin's Taco Sauce or Salsa
comments: "The best canned salsa I've ever had."
Ingredients:
6 quarts tomatoes (24 c) peeled & quartered
4 c chopped green peppers
4 c chopped onions
1 garlic bud, minced
1 c vinegar
3/4 c sugar
4 T salt
7 jalapeno peppers, diced
5 hungarian or anaheim peppers, diced
5 red chili peppers, diced
2-3 t chili powder
1 t cumin
1 t oregano
Cook for 1-2 hrs or until desired thickness and cold pack for 20 minutes. Make 16-18 pints.
