Roll Recipe


Some of the sisters asked for Sister Brooks's roll recipe early to try before Thursday. She said it is important to use the named ingredients. You can actually purchase the Lehi flour and SAF yeast at the grocery store in Nephi.


Here it is:


The Best Rolls!

(Dough can also be used for bread, cinnamon, or cheese rolls.)

5 cups hot tap water

1/2 cup Idaho instant potatoes flakes

1 T salt

1/2 cup vegetable or canola oil

1/2 cup honey

4 cups flour (Lehi Roller Mills Unbleached Turkey Flour)

Mix on speed 1 for a minute (looks like cake batter)

Then add:

3 T SAF instant yeast

Continue to add approximately 7 cups of flour, 1 cup at a time, until dough forms into a ball and sides of bowl are no longer sticky.

Mix on speed 3 for 1 minute

Add 1/2 cup to 1 cup of additional flour

Mix on speed 3 for 4 minutes

Rub soft butter on counter and hands. Separate dough into 4 equal balls. Roll each ball into size of large pizza and cut into 12 pieces. Spray large cookie sheet (jellyroll pan) with PAM. Roll up croissant from large end to small and place on sheet. (3 across and 8 down- 24 rolls are almost touching) Put in oven on lowest setting 150-170 degrees, while you roll out other pan. Recipe makes 4 dozen rolls. After 10-15 minutes, turn oven up to 360 degrees and bake until top and bottom of rolls are light brown, approximately 15 minutes. When you remove 1st pan, the second is risen enough and is ready to bake.
